Hmong Watercress Salad with Ground Pork and Asian Pear
Adapted from Sami Scripter and Sheng Yang’s Cooking from the Heart, this salad is both refreshing and unusual. It makes a perfect summer first course or light lunch. I’ve added slices of Asian pears, which are not traditional, to enliven the dish. If you can’t find Asian pears (which are very firm), you could use slices of apples or other pears. Fish sauce is widely available in the ethnic aisle of grocery stores (look for Taste of Thai brand) and at Asian markets.
SERVES 4
2 tablespoons virgin coconut oil
¼ pound ground pastured pork
1 tablespoon fish sauce
Salt and freshly ground black pepper
2 large bunches fresh watercress, washed and spun dry
2 Asian pears, peeled and thinly sliced into batons
